Asset Studio added an 'Upload as drafts' option so videos can be saved without picking a YouTube channel

Asset Studio's video upload flow now offers three choices: upload to your own YouTube channel, upload to the YouTube-created video ad storage channel, or upload as drafts if you are not ready to publish to a channel. Videos must still be uploaded to YouTube before they can serve in a campaign.
